After a long day at work

All I wanted was a decent meal. Granted, my job is not all that grueling, but I am pretty tired and worn out when I get home. So I thought I'd make life easier on myself by making a chicken and oven rice dish that is one of my favorites from childhood and fairly fool proof. It's not too bad for you - no creams, just chicken broth, rice and chicken plus all the good seasonings to make it yummy. You just dump it all in a dish and bake it. Well, I didn't have any fresh chicken breasts so I thought to myself, you can bake frozen chicken breasts - it says so right on the package! Apparently that was not a good idea. I took the foil off of my dish with about 12 minutes left (to brown up the chicken and finish off the rice) and voila! not even close to being done. The good news is, it's only 5pm and we don't usually eat until 6, so I have time to leave it in there longer. But how much longer? It's been in almost 20 minutes longer and still there is no end in sight. I think we might be eating take out tonight...

Did it work? Did you get cooked chicken or takeout? :o)

It worked! I put it in for 30 more minutes, so it baked for 1 hour 24 minutes and turned out delicious. :-)

That sounds yummy and like something my mom used to make. Except she did it with creamy soup, so I am sure it was fattening!
