Muffins!

So a few weeks ago I think I mentioned that I was planning to make Kyle some gluten-free muffins (I would link to it, but I can't find it...guess I'll start using labels!) and whatever recipe I was planning to use called for butter, but I didn't have any. I ended up putting all the dry ingredients in a ziploc baggie and putting it in the pantry. Problem is I couldn't figure out where the recipe came from and no other muffin recipes I did find called for butter. I also promptly forgot what I put in the dry ingredients since it was a mixture of several different types of flours, baking powder, sugar, etc. I honestly don't know. So today I did a quick goodle search for some gf muffins and happened upon Karina's Kitchen recipe for Brown Sugar Blueberry Muffins. I did some quick measuring to figure out how much of the dry ingredients I had, added some brown sugar, cinnamon and allspice and then followed the rest of the recipe...sort of. I didn't have applesauce on hand, so I just used milk, oil and egg replacer. But the best part was she had this tip for the egg replacer which I think will do wonders for any cakes I make from now on. Instead of just using water with the egg replacer, she uses club soda, olive oil and xanthum gum. Of course I didn't have any club soda on hand so I substituted what I did have on hand that was bubbly and clear - Sprite! They turned out so yummy. I know I didn't follow this recipe really at all, but it gave me some help in figuring out where to go from what I had. Kyle asked for seconds! And yes there are blueberries in there - they all ended up in the bottom of the muffins, but they still taste so good.
